The land of Milk and Honey
A long long time ago, I began to listen to the rumors I heard about milk. It’s supposed to be “good” but for many it is “bad.”
Allergies to dairy are incredibly common.
So I tried -
Soy milk - It tastes okay, but sits in my stomach and takes forever to digest, often giving me gas and indigestion.
Now we hear not so great things about soy. Well, it was no surprise to me and my tummy.
Rice milk - Not as difficult as soy, but still a little weird in the digestive world. Also there are a lot of ingredients - things
to stabilize for “freshness” in the long term.
Almond milk - I found this easier to digest, delicious, but lots of ingredients with weird names, again probably for shelf life.
So what is the answer?
Well, I don’t have answers, but I do have suggestions. I like Almond milk made fresh at home. I use it on my breakfast buckwheat “cereal,” or as a base for all kinds of yummy shakes.
It’s easy!
Your tools: a blender, a pitcher, a piece of cheese cloth or a milk bag, a strainer
Ingredients: almonds, water
You will eventually work out how much milk you want to make. But to start use 1 cup almonds. Before you go to bed, put the almonds in a bowl with enough water to cover.
In the morning strain the water off the almonds and rinse. Then put them in the blender. Add 3 cups of water and blend and blend.
Prepare your pitcher by lining it with the milk bag or cheese cloth. Pour in the contents of the blender. Lift the cheese cloth or milk bag out of the liquid and squeeze out all the liquid. You will be left with almond meal in your milk bag and almond milk in your pitcher, ready for the fridge. You can freeze the almond meal for use later - almond flour. (Very expensive if you buy it in the market)
For sweetening, some people like honey. I use stevia - the green powdered stevia, not the white processed kind. Whatever your choice, it is best to mix it in after straining. Use it as you would milk, or as a base for yummy blended nutritional shakes - add banana, ground flax, maca root, or what you will.
